I kind of think you put c6 too high. Yes, it can transpose into Caro-kann or Slav, but in lines like this:

the c pawn is accomplishing nothing other then blocking in black's knight.

White's play is somewhat illogical here.

Black shows his hand early by telling White that he's probably going to play ...d5 next move.

So White generally shouldn't respond by developing his king bishop to that very same blocked diagonal.

If your opponent builds a brick wall, instead of running headlong into that brick wall, why not find another way around it?

The bishop won't exactly be "happy" on g2 there, where it does little but bite on granite. It's playable, sure - but not ideal.

Transposing to a Caro-Kann or to a Slav (just to name a few examples) would give White's king bishop better prospects.

If Black plays for a certain setup - don't justify the setup.

Instead, try to (if possible) prove that the setup is misplaced ...

The point is, it doesn't justify it, it ignores it, causing the pawn on c6 to have blocked in it's knight to defend a defended pawn.

Another eample I later on showed was

which has been reached in 102 master games, and white won 56% of them, while black won 9%.

We never came to a conclusion to it. Ended in still disagreement. 90% chance it gets brought up again and argument resumes.
