When white delays or avoids playing 2 c4 what do Grunfeld players tend to like to do then?

It's kind of a difficult question. The Game Explorer shows 19 alternatives to 2 c4 as 2nd moves for white after 1 d4 Nf6.

Help us out and give us the 2nd moves that give you trouble.

You probably know the answer already. Don't you play the London System yourself?

Black has numerous developing moves he can play- 1...Nf6 2...g6 3...Bg7 4...O-O.  Only if White is threatening to play e2-e4 and Black pre-empts this with ...d5 does it become a Grunfeld.  White playing c4 on move 2 is not what defines the opening.

If White continues to not threaten e2-e4, Black can continue with ...d5 anyway, or he can play with ...c5 instead (which makes sense, for instance, if b2 is a possible target).  You see occasionally a very aggressive Black approach with both ...d5 and ...c5, essentially a reverse Catalan.
