What is your favorite way to play against The Scotch?

Bc5 and Nf6 both good, probably nf6 slightly more. Steinitz is terrible, I have no idea what you are talking about

Why is it terrible?

I play the Steinitz variation, but not the main lines where black wins a pawn but needs to defend the whole game. I go for some extremely sus lines where black sacrifices his rook on a8 for a huge attack.
5.Nb5 Nf6!? 6.Nxc7+ Kd8 7.Nxa8 Bc5
or
5.Nc3 Bb4 6.Nb5 Nf6!? 7.Nxc7+ Kd8 8.Nxa8 Nxe4
or
5.Nc3 Bb4 6.Be2! Qxe4 7.Nb5 Qxg2?! 8.Bf3 Qh3 9.Nxc7+ Kd8 10.Nxa8 Nf6
