As Black:

French or Pirc vs. e4

KID or Benko vs. d4

As white:
Both d4 (queen's gambit) and e4 (Italian game, open sicilian, Nc3 French, etc,), usually whichever I feel like. Usually I play e4 against people I feel more confidenty against, d4 against stronger people.

As black:

vs. d4: e6, French if they go e4, Nimzo/QID if they go c4.

vs. e4: French (Winawer vs. Nc3, c5 vs. Tarrasch), starting to play Sicilian (Sveshnikov) as well. Which one is usually similar to whether I use d4 or e4; I use one if I feel like it or if I haven't played it in a while, but I also tend to go French against stronger players and Sicilian against people I feel more confident against.

vs c4: e6, try to transpose to a d-pawn-ish game. Yes, I'm not very booked up against the English.

Seems some people have started just answering the thread title and not the OP! That's fine by me, it's more interesting to see which openings keep coming up over and over again and which openings are mentioned relatively rarely.

Against 1. e4 I used to play the hyperaccelerated dragon move order (after 1. e4 c5 2. Nf3 g6) but have gradually switched over to the caro-kann when I realised that I felt more comfortable in those positions.

I played solid, positional openings for a while, (like the French and Caro Kann) but chess started being not so fun, even though my rating went up. Now I play tactical, open games, sometimes gambits. Lots of fun. Right now I'm on a Traxler kick. (This is not an opening to play if your rating is dear to you.)

I use to play e5 until it got boring...switched to the French and that's usually my defense of choice, but I do some Dragon Variations of the Sicilian as well as the occasional Modern, Pirc, and Caro-Kann.

So...

50% French

40% Sicilian

5% Caro-Kann

3% Modern

2% Other

That's pretty much my stuff v.s. white.

with white e4 then either bishops opening against e5 or grand prix attack against the sicillian.

with black against e4 I have started palying the Caro Kann after being a long time french player.  I have not yet found an opening I love against d4, I am trying out the grunfeld - but I suspect I am going to end up drifting towards the Nimzo Indian (I am not much into the hypermod stuff though) or maybe the benko gambit

against the english I have had good luck with e6.  The pawn structure you end up with in the french - e6, d5, c5 is decent against a lot of things.  I quit playing it against e4 because I could not stand being behind on development all of the time.

(I should be doing tactics right now . . .)

Kasparov is the reason most people play the Sicilian. As for what openings I play, sorry but you're on a need to know basis.  And you don't.  Tongue out
