What's the most symmetrical opening ever.

Most boring little kid opening ever... Stops getting symmetrical if they know what they're doing unfortunately
We must be thankful that this "boring opening" exists, else the following masterpiece would have never been played.
If a game becomes boring, then blame it on the players- not the opening.
Do you know any interesting games featuring the exchange Slav and the exchange French? I'm genuinely curious, as I only hear bad things about those openings
Yeah I'm curious about this too. Are there any "exciting" games from the exchange French?

I see you're a premium member so I'll give you a link to a video about exchange french where one is covered I think

Rapport-Bluebaum; Bundesliga 2018. French exchange, white launched a fierce attack and won in 17 moves.

The Petrof isn't symmetrical at all except in the first two moves.
There are lengthy theoretical symmetrical openings in the London system.
Not always true! There is a fairly common line that is perfectly symmetrical 6 moves deep, and I have an ongoing correspondence game at ICCF (where REAL correspondence players play) that went symmetrical a move further via a sideline by Black (I am White):
1.e4 e5 2.Nf3 Nf6 3.d4 Nxe4 4.Bd3 d5 5.Nxe5 Bd6 6.O-O O-O is a common symmetrical line.
I played 7.c4, and Black went with the offbbeat 7...c5.
I then played 8.Nc3 and he traded Knights on c3, breaking symmetry for good.
It is currently Black to play his 16th move and the position is a slight edge for White.
I will not give Black's 9th move onward so that no ideas of giving advice occur.
