Which is the best varaition of the italian game?

Learn the Two Knights Defence and Giuoco Piano. There are a bunch of variations in each and a lot of the time your opponent will not play the moves they are ‘meant’ too (either through lack of awareness of the lines or deliberate deviation), so don’t get to caught up in opening theory at the expense of the game as a whole. As for the Hungarian Defence, it is less worth learning than the other two as it has less possibility for being sharp, it is a good defence to employ, however, if one is searching for a drawing game. Oh, meant to say that you should learn those two as there are more sharp lines. Have a look at ‘the fried liver attack’, ‘the lolli attack’, and ‘Evans Gambit’.

The fried liver attack is really fun to play.

Even if they decline it, your a pawn up, but behind in development while their structure is ruined. I'll post an example

So maybe don't do 2 knights unless you want to learn some theory.

Yeah, white will be having fun if Nxd5 so black will usually avoid that. I go with the Na5 line after exd5.

Anyway, yeah. You can always play this line to "decline" the fried liver I guess.

Black has to be pretty sharp or ignorant to willingly play 5....Nxd5. Black should really know what he/she is doing before going into it. Another strong reply (and arguably better (by people who know more about chess than me)) is the Lolli attack which goes (if you don't know)

And clearly black is in for a difficult time, even if not actually worse, being able to come up with moves over the board isn't so simple, and we are not computers. But, yeah, the 'declining' line to the Fried Liver as you put it is probably the most pragmatic way to play this position unless you have something up your sleeve, so to speak.
