I like the ponziani, which I got from a GothamChess video saying it was the best opening for beginners.

Stockfish gives it a slight disadvantage (not as bad as playing black though)
but the majority of the time your opponent will give the advantage back anyway.
There are a few traps and common mistakes, and even if it opponent doesn’t fall for the worst of them, there’s a good chance you’ll end up with a strong center.

1. e4 e5
2. Nf3 Nc6
3. c3

The Scotch is a good sandbox to learn in. It has good variety depending on what part of your game you want to improve and what kind of positions you want to have. Against the Sicilian, I'd suggest the alapin. With black, I recommend the petroff and queen's gambit accepted.
