Stanford gambit is dubious if your opponent has seen it even one time before they’ll know not to fall into the traps

I think that the Sicilian Defense is the best for black, however there are a lot of different lines, but it is really cool!

At 1100 I usually play the Caro-Kann against e4 and the Queen's Indian against d4, both are solid choices without huge amounts of theory. Sicilian is good and popular at higher levels but it can be hard for beginners to learn

I would say no such thing. Try out different openings and see which ones you feel comfortable or enjoy playing.

Stafford Gambit is complete Trash! 3...d6 is CLEARLY better!

There is absolutely no such thing as a "best" opening, but there are a FINITE number of openings that would even remotely qualify to even be in the argument.

For instance, against 1.e4, that would be 1...e5, 1...e6, 1...c5, and 1...c6. All other moves are inferior to varying degrees, like 1...d6 is slightly inferior while 1...f5 is complete trash!
