3...exf4 is bad because of 4.e5, while 4.Nf3?! (transposition to a king's gambit line) can be answered by 4...d5 which is probably somewhat better for Black.
In the game, you played 5.e5 after Nf3, which gives Black two good options- 5...Nh5 and 5...Ng4 (none of them would be possible with the knight at g1).

For that game, you would actually want to play Nf3 because your opponent moved their queenside knight, leaving open the option for Qh4+. Nf3 prevents that idea.
