Queens cannot jump over knights (or other pieces). Are you playing some odd chess variant?
3...exf4 is bad because of 4.e5, while 4.Nf3?! (transposition to a king's gambit line) can be answered by 4...d5 which is probably somewhat better for Black.
In the game, you played 5.e5 after Nf3, which gives Black two good options- 5...Nh5 and 5...Ng4 (none of them would be possible with the knight at g1).
