I didn't expect such a high rated player to answer a patzer like me, I guess that makes sense. Might as well get through a bunch of games quickly especially if you spend so much time on classical games

I also only play 3 and 1 minute chess online (all my 15/10 games are simuls).
I don't know why 3 minute is more popular than 5 minute... but I'm pretty sure strong players prefer speed games because (other than it makes 99% of cheaters obvious) they play their serious chess OTB, so when they come online it's just for fun. In particular pros are going to be doing a few hours of serious chess study every day.
Plus, even if they were going to play long games, it would be a mistake to take the games very seriously if their account reveals their name because their opponents could use it to research them.
The result is you see people like Carlsen, the world champion, play 3 minute games with 1.g4 or as black 1...g5
(or when they play more seriously, they have a blitz-specific repertoire, not their main OTB repertoire unless it's a special occasion like playing for money).
