The bulldog rules don't change. They just call it a variant of bulldog chess because there's new pieces.

Starting position for all of them, please fix so I can fully understand this.
The Boss
The boss moves like a king and cannot capture. If a piece is a king's move away from the boss, that piece turns into a pawn.
In this position, if the knight was a boss and they moved one square forward the black queen would be turned into a pawn.

If a king gets turned into a pawn, that king loses. Therefore this would make it possible for a boss to check and checkmate.
If the knight was a boss this would be checkmate and white would win.
The boss has one more ability. It can choose a piece one square sideways from it to be a vice boss.
There are no changes if a piece becomes a vice boss except if the original boss gets captured, the vice boss automatically turns into a boss.
If the knight was a boss and the bishop was a vice boss, this would be checkmate
One boss can only have one vice boss and pawns can not be vice bosses.

Rule clarification: Pawns on the 1st or 2nd rank can move two squares up and pawns on the 8th rank that are next to a boss automatically promote when the boss is away.
