Were all of those knight and pawn moves in the opening correct?

I don't understand why the white rook captured the black knight to make in an archbishop and pawn endgame.

Why did white underpromote to arcchbishops?

The opening knight moves were mostly maneuvers. Seeking out control of more space. White played rook takes knight just to show off once he realized the arch + pawn ending wins easily. The underpromotions when black didn’t resign were for psychological humiliation.

The opening moves were pretty obvious ones sometimes but other times like "huh?" The game also shifted from fast attacks to slow to like almost deliberate weak moves that just made the game drag on longer. I couldn't learn much from it. It was either way over my head or moves embarrasing in weakness.

The opening was the result of both sides doing some ‘home research.’ We’ve each played one another at least a dozen times already. There are latent traps waiting to be sprung in the moves where you have your doubts. White also plays moves to deliberately upset his opponent when he doesn’t get a timely resignation. He will sometimes make the weakest move that still wins. Dragging the game out longer. Just to make you mad. All part of ‘match psychology’ since we are playing until someone gets a 10th win. After 4 games he is ahead 2-1-1.
