My top five favorites are:
#1 Spell chess because the spells are interesting and fun with good looking chess board and pieces.
#2 Atomic chess because it is a classic and if you’re bad at chess, it still has a chance of you winning.
#3 Giveaway because it is basically opposite of what you’re supposed to do, you have to sacrifice all the pieces, so it is fun.
#4 Setup chess because you can place pieces instead of having them all set already.
#5 Chess 960, because everyone knows this one; It’s the most classic variant.
