Chess960 is available on iOS. Are you playing on Android? If you are, then I don’t know much about that. You can go into the “Custom Game” setting, and change the variant from “Standard” to “Chess960”. But I don’t think there’s a way to play any other variants on the app…

Just press the add to home screen button if ur on chrome
It will use the website as an actual app, and not a shortcut to the website.
I am using appetize.io for this demonstration.
But it will be difficult to create a variant tho...
Chess960 is also unavailable on the app, which is funny as it’s shown when you compare stats with other players.
If I’m wrong please tell me but to my knowledge there is no way of accessing these variants.
