Why isn’t there all the online variants on mobile?

The variants are completely a separate codebase and server. Plus most variants wouldn't work well on many mobile screens.

I think at least “king of the hills” and “three checks” should work very easily.

Click on tournaments, go to daily tournaments. Then, click on, “upcoming arena tournaments”, then click on one of those! You’ll see a button that says, new game. Click it, and select ur variant in the top drop down box, and if urs isn’t there, scroll to the bottom the drop down box, and click, “more varients!” Hope this helps!
