Other than 960, variants are only natively supported on the website

Go to website and choose the variant in the starting game menu which has time controls and variants

Or.. You can go to a club, click something that isn’t available and gives the error 404, it has a button to take you home then you’re basically in website ui in the app

Oh wait.. you can find someone in the club, look at their profile → games → one of their games → start a new game
