how is my blitz game so much worse than bullet

in long game chess over the board I find it rare that anyone I come across can beat me. Yet when I play blitz I can barely maintain 500. I guess normally you could say it's because of the time pressure but I'm over 1000 in bullet pace chess. you'd think if anything my blitz would be higher. I am so confused. literally can beat almost any bot up to 1500 yet my game analysis tells me I'm playing at a sub 300 elo range in blitz. what do I need to do to improve I'm soo confused
