What does it really mean to be at 2000+ playing blitz, or bullet? Is that a real chess rating? There are too many unknowns involved with internet chess.

People's ratings are stable, so online ratings are real.
An OTB rating earned in games lasting hours is not the same as a rating in 3 minute games, obviously, but a rating is a rating. A 2000 blitz player is a 2000 blitz player.

In keeping with the spirit of the banter of discussion, I gently disagee that ratings are ratings. If that were the case then everyone who had a bullet rating of 2500+ could be considered a GM. How could this be? It seems unlikely.

It is possible to boost +100 or +200 blitz elo by playing against computers.
Initially , you may lose against 1900-2000 computers. But if you analyse and memorize against the same opening variation that coomputer play, you can boost +100 to +200 elo.
Then you can get 2300+.
Against human, hmm, I dont know. I never get 2300 in this site.
