Yes, I think I figured it out! You have to get platinum though and then you can go into your insights and at the very bottom is your record against every country you have played a player from on chess.com!
How to see players by country
Sort:
Awards, Passports. And this works for free members.
I found the page where you can see countries you've played against under Stats > Insights, and the last option, choose list view.
