The donkey: Moves the same way as the knight but cannot jump over other pieces.
The pigeon: Moves 4 AND ONLY 4 squares in any direction. Can jump over other pieces.
The cow: Moves like a rook but at the start of every turn it walks one square back towards your home row; this does not count as a move.
The bull: Moves like a rook but can only capture a piece if one of your own pieces is in the way; both pieces rammed by the bull are removed from the board.
The infant: Moves like a king but can only move if another piece is adjacent to it.
The ghost: Can teleport to any square on the board with the opposite colour than the square it is currently on. Cannot capture pieces but can be used to block.
The cowardly knight: A knight that cannot move if it is under threat.
The explorer: Moves like a queen but can never visit the same square twice.
The pawn broker: Moves like a pawn but if captured by another pawn that pawn is promoted.
The mimic: Moves like a king but captures in the same way as the piece it is capturing. (That one actually sounds cool.)
The pinball bishop: Moves like a bishop but bounces off the edges of the board and other pieces changing direction multiple times. The pinball bishop only comes to rest when either it captures a piece or a friendly piece is blocking it diagonally from moving any further.
The anti-king: moves like a king. Capturing it loses you the game!
I like the pinball bishop best 😅 ...those are some great suggestions -Im guessing you're either a genius or anebriated ...either way ...v. amusing 🙃
Heres my 2 cents ...an entire chess set ... top of the range....with repelling magnetic properties, rendering all of the pieces totally useless.

The Blocker: You need to capture it three times to pass it, and they are all on the 5th and 4th ranks.

The i-phone. Pieces in posession of an i-phone become very distracted and stop moving how you want them to move.

The Hacker. Moves ur piece once per turn and glitches it into nothing after 2 turns.

The Peacemaker: When you capture this piece, it forces a draw. You cannot capture any other pieces while its on the board
