I'd say Bishops are male, because the Catholic Church doesn't allow females to be priests.
Knights were predominately men, historically, but there is Joan of Arc, so we can say even in medieval times at least one knight was female.
In modern times, I'm sure there have been plenty of females knighted by the Queen of England. But being knighted in modern times has little to do with knights from the medieval ages.

Officially I dont think women are knighted by the Queen of England. Though the ceremony may be the same or similar, women are honoured with the title of Dame. Damehood is the female equivalent of knighthood. So they are not knights, but they are equals. No less, no more. If you look up the wikipedia entry for Dame, it gives other medivelle women who participated in battles alongside their knighted husbands. A bloodthirsty lot.
