I've thought about this too...I will frequently send GG. But, sometimes I don't because I don't want to be insulting, if my opponent blundered badly or got destroyed. It's kind of almost an insult to say GG when they really made some bad decisions and miscalculations in a losing game. So it's well intentioned, but maybe not appropriate. I make myself send it sometimes when I've badly miscalculated and got destroyed and am angry and frustrated that I lost by blundering a piece or made a couple bad decisions costing me the game. I swallow my pride and send the congratulations.
I wonder if this is a formal protocol or courtesy OTB, like a fist bump GG, win or lose. I also tend to fight all games to the end, no matter what. Unless it's obvious my opponent is sharp and on their game, and it's an obviously lost position. Then I will resign. I learn by fighting to the end and pick up an occasional win, draw or stalemate. When my opponents a jerk, I always fight to the end and then resign 1 move before checkmate.
I've also noticed a few players like to send insults. The opponent would like to chat will go on during the game. When I hit it, it's an emoji applauding themselves or insults like a bomb with a fuse lit, mean emoji face, etc. I don't respond to it. They then will continue to send emojis during the game, which is a distraction to ignore. Maybe don't hit that button until game over. I give each opponent a thumbs up or down click for sportsmanship, with frequent GG. I don't know if the thumb up or down click means anything.
well in otb after you finish a game, you shake hands say GG sign eachother's papers confirming the results of the match. Then you can either analyze the game with them, or do something on your own. Thats the norm in OTB tourneys.
