Popular openings vs unpopular ones
I think that opening strategy is Effective. Very few are really exploring so many openings. Not everyone can find the best moves during the game. Even if they find the best moves, their clock have decreased significantly. Even Karpov lost to Miles in a St. George defense.
Some players enjoy the deep theoretical battles of well-known openings, while others prefer the creativity and surprise of less common lines.
The opening does not matter below grandmaster level.
You do not win or lose because of the opening, but because ot tactical mistakes.
This is even more true in fast time controls.
Even at top grandmaster level,
it is sometimes better to surprise the opponent than to follow trodden paths.

I disagree person with way more expirence can more easily beat up in the opening by getting possition with they know much more than you, they know and punish for small mistakes. And it gonna turn into a well known middle game possition where they can't really mess up. So they have way more time than you, or better possition or both.

The better player always beats the better theoretician.
Here is an example game.

White was very familiar with this opening, black was not.
On move 19 white had used 5 minutes and black, who had to find his moves over the board, had used 90 minutes. Guess who won...
