It's a common idea aimed at increasing the scope of your king (if they capture) and moving their weak pawn closer to your king (if you capture on d5 then d5 becomes weak)... and in this particular case you're also moving your weakness farther away from the black king (c pawn moves up the board.
But I'm guessing you knew this and this is (once again) a troll post.
Interesting endgame. I should have lost the game, I didn't play it accurately at the end. I thought I should go for the weak pawn on b7 first and that the rest would fall. Stockfish is showing to go for the e pawn instead.
