But in game review it was actually a draw till my opponent blunder letting me check with the rook on the last rank and promoting my pawn with the rook's guard

Playing against a dummy is always a possibility. That does not change the fact that this ending is a draw with subminimal effort.
Can someone teach me how to draw such an endgame
The diagram is a trivial case: Keep the king at f7, move at f6 if checked via the 7th rank, and keep checking the white king vertically at every opportunity. There is absolutely no way for White to make progress.
