Yeah of course exchange a bishop, then lock pawns and use the bishop to create zugzwang to win the back pawns with your king.
It's unlikely your opponent will allow that though, but you should be able to target pawns on the colour they can't protect. Or even at the right time sacrifice the extra bishop for a pawn or two.
If the pawn structure is symmetrical and one side has an extra bishop, how should he go about forcing a win?
Should he exchange one of the bishops whenever possible (to gain zugzwang potential)?
Is the defending side OK so long as he doesn't exchange his bishop?
