In regards to when you have the black pieces. You play the Caro Kann, but you also in many games that I looked at play e7 to e5 very early. In general, this isn't something you do when playing the Caro Kann. That pawn belongs on e6 to strengthen your d-pawn and freeing your darksquared bishop so you can castle asap. https://www.chess.com/analysis/game/live/168288332266 This game for example. Playing e7 to e5 lost you the game. White was able to crack open your position while your king was still in the center. There were other mistakes, like not playing pawn h3 on move 8 to win a knight, but missing that didn't lose you the game. Whether playing the caro kann or a different opening, usually you want to castle before opening the center. Opening the center usually benefits the player who is more developed.

If you do want to push any pawns in the caro kann, you can do a minority attack with the queenside pawns because pushing those will not compromise your structure. But the pawns towards the kingside you never want to move.
