there is no such a thing as "gring tactics" you can grind the position strategically, but grinding tatctics is not even a thing, maybe can happen against a 100 rated who hangs smth every move, thta'd be called "grind tactics"

they give you confidence sine the beginnig of the game, knowing what to do and having a psychological and knowledge advanateg over your opponent...
Picking a dynamic opening like the french is really helpful because it is dynamic which means both positional and tactical positions can arise, and it is tricky and one mistake can cause a loss. Knowing it well can teleport you up the rating ladder really quickly. You may ask, the Sicilian is also tricky and one mistake looses, true but the Sicilian is much more popular and much more well known, which makes your opponent's mistakes less often and lkely
