Hey, total beginner here. Question (in Dwight Shrute voice) if someone checks me directly off a square my king is on, do I have to move or can i take him if safe to do so? And if I can't move its check mate because I can't take the piece?

If someone checks you and their piece is next to your king and has no defenders, yes you can take their piece
