Opening Knight/Rook Exchange

Hi,
I haven't studied chess much, just enjoy playing and I would love if someone could please explain something to me.
Why is it every time during the opening few moves, when I take my knight out to play Knight to F3, my opponent immediately forces an exchange with their Bishop? Like EVERY TIME?
Would just love to know what I'm missing here 😅
