I like the French against e4. It can fork a bunch of ways, but it's a lot of "if they do this, I definitely do this." like you're looking for. Basically, you play e6 then d5. If they exchange, you take back and take a comfortable position. If they push e5 you play c5 and pile up on winning d4. If they do neither, you play Nf6, then usually they play e5 and you play Nd7 then c5 going into piling up on d4 again. This is extremely simplified but if you don't mind learning a small handful of opening lines and want white to have to stick to those lines or do something unsound, the french is pretty great.
Against d4, I'm not sure. I play the modern benoni but that's the opposite of what you're looking for.

Against e4, Lemming Defense (e4 - Na6) is the most powerful secret weapon for the black pieces.
The Lemming defence is very rare and occurs in less than 1 in 1000 games. From the data, you can expect that White will have a 35.29% chance of winning, while Black should have a 64.71% chance of winning. Because of the fact that most players have probably never seen this opening and that White has such a low expected chance of winning, it may be well worth it to keep this variation in your back pocket. Since if you are Black, you should have a significant edge and will probably catch your opponent off guard.
