queens gambit question

I have a question, in the line of the queens gambit, you always move e3 to protect d4 but before moving your c1 bishop on f4, I don’t understand why, cause you defend d4 with your knight then put the bishop on f4 and you have two nice bishop, right?

Who told you to play e3 first? There's nothing attacking it and it's already defended by your queen.

You are absolutely correct that you can usually move your bishop to g5 or f4 before playing e3.
