My rating jumps from 600 to 900 and back to 600, I'm not sure how the ratings work, but it's not consistent.

That depends. The first few years of chess all I played was blitz and it got me to about 1800.
The OP however needs to actually do some studying, maybe watch some youtube videos, look up openings, strategy, stuff like that.

I am looking at your rating. How come you don't have the title yet, if I may ask? I mean 2 600, almost 2 700 blitz, I've seen weaker IMs here. And to confirm that you are titled strength, I see that you are beating on some CMs, NMs and FMs. I hope my intrusion isn't a bother.

10 minute games are probably still too fast for you if you can't avoid blunders. At that level, much longer games are advised. But at the very least, try 15|10.

I haven't played a tournament in about 3 years. Partly due to covid, partly due to not having the time to play an all-day tourney.
There's a guy rated about 2100 USCF that goes to my club though, I'd guess I'm somewhere around there now since I regularly beat and draw him.
Keep in mind as well, I'm playing mostly blitz. This lends itself to lots of blunders and lesser-quality play.

That being said, OTB ratings and online ratings often have no bearing on each other. You can find FM's over 3000 on here, who OTB are only 2300-2400.

Yeah, but still impressive. I know there are slightly lower rated titled players that are better in blitz, but I didn't know there are untitled players on par with some IMs in blitz. That probably means you should aim for the title though. You might have improved a lot in those 3 years.
You're a beginner. That's normal. Problem is you started at higher ratings as mentioned above, which means you were paired with stronger/more experienced opponents. It takes a few games for chess.com to match your rating to your skill/ability. Play a few more games and you'll start to win more
