when you play speed chess and the time runs out ia have more pieces why don't win??? what are the reasons>

Because you have to complete the game within the allotted time. Timed chess means you have two components, the board position, the clock position. If your time runs out your opponent gets the best result the position on the board will allow (I.e a win if they can checkmate you with their pieces, a draw if they can’t).

Because the goal of the game is to checkmate your opponent, not to have more pieces. 

Having more pieces doesn't mean you're winning or have a better position.

For example, Look at this legendary opera house checkmate by the one and only, the iconic Paul Morphy. He has 2 pieces. His opponent a lot of pieces.

This has nothing to do with "speed chess". Even in slow chess, it is the same. You seem to be very confused about all this.
