Stalemate

I think I understand why stalemates occur but out of about 20 games I have played, 90% end in a stalemate when the opponent should make a move. The thing that is hard for me to understand is: if I have an opponent pinned in such a way that only allows for their move to place themselves into checkmate, shouldn’t I win? Why is that an illegal move? It’s a little infuriating... didn’t I do a good job? Or does this mean I suck? Thanks in advance! Also, looking to play real people if anyone wants a game.

Don't just surround the king. Put him in check.

Understanding that you have to cover the escape squares is important but the king has to be in check.
