Understanding grandmaster games from the database

Hey everyone,

I am starting to move from playing pickup chess, so to speak, to actually studying games. I am reviewing this website for the tools that will support my study, and as I was looking at the Openings Explorer, I looked at the Sicilian. After two moves, I looked at the win/loss percentages for white, for example, and found an interesting 3. Nd4... with > 50% winning for white. So I picked out a Grandmaster game:

I wanted to see what I was missing...why would sacrificing a knight on move 3 lead to a strong position? I reviewed the game and found accuracy of only 20 - 30% for each of the players, both rated > 2320. 

I presume I am missing something. Can anyone tell me how to interpret this? Was this bullet chess? I presume since there were only 20 moves it may be something like that. Is there a way to sort out longer timed games so I can really dig into strategy and tactics?
