I think the Knight because when fork your opponent can't stop it.

It depends because if the position has nice open diagonals that have something to target there then bishop and for knights a closed position(a closed position is a position with pawns in the middle and not the side) because knights can jump over pieces.

Bishop. I know it depends on so many things, but I wanted to avoid a cowardly answer.

If you trade off both knights early, the middlegame feels like playing with oven mitts on. Positions get clumsy, and you miss out on all the sneaky forks. Knights are your chaos agents.

If you trade off both bishops early, the endgame gets ugly. Suddenly your opponent’s bishops turn into laser snipers, while you’re left swinging short-range weapons on a wide-open board.

I think strong players are good at steering games into open positions where bishops dominate, or squeezing value out of the bishop pair in endgames, especially once the pawns have cleared. That said, I don’t want to undersell the knight: in a crowded board or a complex endgame, they can be just as deadly.
