Grand Prix is what I like to play in longer games, however in blitz games I would suggest the open Sicilian.
Play the Open Sicilian and use an English attack setup against the Naidorf.
You do 0-0-0 and attack the opponent's kingside with your pawns, to open files. You will win a lot of games against beginners who don't know what to do...
You can't play chess like that
If you assume they have just a little knowledge, you can try to trip them (black can really suicide quickly if they try the Sicilian without understanding), but trying to set up risky traps will lose every time if the person does have a bit more opening knowledge. You should try to play as if your opponents are worthy of playing, meaning you assume they know what they are doing.
I will take you another direction. For high speed play, if you learn the opening theory and principles more generally, development and pawn structures, you can play against any opening without a lot of fear until you reach higher level opponents, and you can do it without having to memorize so many lines. Its better if you study the opening responses but this opening is one of the WORST about having to know the next 10-15 moves instead of just 4-5.
I'm low rating Blitz player and I keep coming up against Black playing Sicilian. I know this is a complex opening for beginners so what can I do to trip up an opponent who is pushing c5 with possibly not much knowledge of how to play the positions it creates.

You certainly can. Open Sicilians with 0-0-0 are fun and (at the beginner/intermediate level) not too hard to play, since the plans are straight forward. And I doubt that 1200 players, playing the Sicilian, know what they are doing... However, it's also an opening that GM's play, so it's not a trappy BS opening that you will have to dump once you get stronger opposition...
Of course you can avoid confrontational lines forever and play a Closed Sicilian... But if you want to avoid a struggle why play 1. e4 in the first place? Why not play the London or the Colle like most beginners these days?
