What's the best opening for beginners?

In the 1200-1300 range there are plenty of people who are just starting with learning their openings and various lines and they get confused very easily.

Usually, all it takes is one wonky move at, say, move 5 to 8 from my part to get a completely wild game.

Since I'm not gunning for rating and am not a chess expert, my main goal is to have fun, and I can't do that if we play both standard openings for the first 7-8 moves, which usually ends up in endgames with queens off the board and a symmetrical pawn structure.

I've also noticed that lower rated players avoid Sicilian as black and open 1. e4 e5 in about 3 in every 4 games (either as white or as black).

friend a player at least 200 points higher in grade , play some unrated games v them and if possible use the takeback options , winning or losing isn't the goal , but instead to have them coach you which moves are good which are not ,

once you start getting draws and wins v them , look to another player rated higher and repeat this same process

IMO, openings don't really matter at the beginner level. Players under 1200 let me get away with all sort sorts of crazy stuff.  For example...

I'm a beginner in chess and I have only learnt the london system so far . I think it's the easiest white opening and very solid . Can someone help me to learn more simple openings for white and black . Please quote if you have some simple openings

The hard thing is that you can't just play one opening because your opponent is completely able to change the opening, so not sure how to answer this, but I do enjoy the reti opening as white, sometimes the catalan
