Why is so hard to win over a pawn advantage?

after losing one pawn, because they know that his opponent is so good that he will win with promotion. but do I need to play perfect to maintein tha pawn advantage? how to control that? Often I lose some pawn and all my efforts to keep the advabtage seems in vain.
