If you have to follow normal chess rules e.g. not allowed to take the king, then I don't se a solution.

now how many moves does it take to checkmate someone that is always mirroring white (ex. b4 b5 nh3 nh6 so on)

First try without checks so it is possible to mirror the whole way: 1 g4 g5 2.f4 f5 3.gxf5 gxf4 4.Nf3 Nf6 5.Ng5 Ng4 6.f6 f3 7.f7#
