+3 better then +5?

Hey guys!
Had a question for you all. With move 27 I'm skewering the king for a nice material win. But looking over the game review, it suggests that I focus on winning the knight over winning the rook? Specifically, for move 29 it wants me to take the rook, which would be recaptured by the king, rather than what I did in taking the knight, checking the king, and winning the rook for free.
 
If I follow "best moves" at the end of the exchange, we both lose our rooks and I'm up +3 with a bishop, whereas with what I did, we exchange knight/bishop and I only lose one of my rooks and am up +5. How is the former considered "best"? Am I missing something?

The ways of the engine are mysterious. I agree with the way that you are thinking about it but I can also see that the engine sees a higher evaluation score from taking the rook on move 29.

I spent a while trying to follow why. It has to do with those two black pawns on e4 and f4.
