Here is a game where Black played the French, and resigned under 30...

Nothing much to say, even after all of black's inaccuracies, simply Qe7 near the end is still perfectly ok for him.

 White seems to have a big positional advantage, but not only is white still down a pawn, but also, the queenside pawn structure is frozen for white. It's very hard for him to achieve anything there, so he is looking for his chances on the kingside (where not only black is slightly weaker, but also the e6 pawn makes it slightly hard for black to arrange defenses there.

 

On the other hand, white cannot easily bring more attackers, so he has a nice positional pressure for the pawn. Complicated position, although I believe black should be ok.

 

Nd7?? was one huge mistake that threw everything down the drain...

You mean French suicide.  Black lacks feeling for the French and probably plays it to cut down on White's possibilities. I don't think he is familiar with Alekhines Gambit (4. Nge2).  For your part 7. Bb5 was a poor move, played to induce an inferior move (c6) but giving up too much to the correct move (Bd7).  I'm not thrilled with 11. Be5.... You could have delayed a move, exchanging off his knight keeping your queenside intact and the potential of c5 as a strong outpost.  Black should have resigned after 14. Bd6.  Instead of 19. O-O you might have considered Kd2 to connect the rooks, take away any tricks on the g-file by black but since he started to open up his King for you it didn't matter much.  26 Bxe6 is better than Queen takes, get more pieces in there, another possibility is getting a rook on the d-file in conjunction with the Bishop move.
