Just at first glance since you can castle to either side, the follow up after the fork can be Rf8 or 0-0, putting more pressure on the f3 Knight which is pinned to the Queen. You might even get in Qd6 or in a crazy world Qh4. dxe5 doesn't give you anything beyond the fork.

If dxe4 be2 and if exf3 gxf3 and the bishop is trapped and they get there piece back

in this game:
10. fxe4 is considered the best move. Why would 10. dxe4 be a miss and better for white? I mean both of them captured the knight.
