I like rooks because they are pretty versatile. Plus, trying to mate with queens is prone to making silly mistakes.
What piece? *snicker*
I usually use the queen simply because it pops up more than any other piece in mating situations. Endgames (promoted pawns), the opening (queen raids), and only occasionaly in middle games because usually it's been traded off by that point.
