Take with Bishop or Knight?

Greetings from down here at 800 ELO -- I need some wisdom from more experienced players. White to move and I am going to take the pawn on g5.  But, do I  play Bxg6 or Nxg6?  I chose to take with the bishop for the following reasons.  1. My knight has already moved and the bishop is undeveloped, 2. Moving the knight reduces my control of the center.  Either play is winning, but it turns out that taking with the knight is much better (+8.3) than taking with the bishop (+3.5).  Is there any sort of "golden rule" or other insight that could have helped me determine that Nxg5 was the better move?

Why, the knight, and its almost a nobrainer here.

Because taking with the knight opens a lane for the queen to the king (Qd1-h5+), a very important angle of attack. The queen is the most important attack piece, though because of its value one has to be also extra careful.

Also knights are devastating up close, but they dont do distance. Your Ng5 will be ready to fork queen and rook on f7 once the queen has given a check on h5.

About developing a piece, especially with bishops once you have the lane openend for them, they are already kind of developed, because you can activate them now at any time, over any distance. Here you have opened BOTH lanes for the bishop.

Thats why some say "knights before bishops" in the opening. Once you have opened the lane, you can activate bishops with a SINGLE move. Knights need at least two moves to get close to the opponent, and depending upon where there is a good outpost, it can be many more moves.

Also your lonely bishop wont do much on its own. And you still only need a single move to activate him, and you have opened BOTH lanes for the bishop to activate him. Once you have moved the knight another time, you can move the bishop in just fine, too.

Also taking with the bishop will actually force black to activate their queen. Unless they miss the queen is attacked. Dont wake sleeping giants.

About your center, your control of it is already maximized. It will take black some time to attack it.

So, from first glance, yes, definitely the knight.
