What is this opening trick/trap name where white basically sacks the bishop?

That’s not the Italian. I suppose what you meant was that YOUR first three moves were the same as the Italian. This doesn’t have a name as far as I know, considering it’s a rather uncommon position in an uncommon opening. Everything up to Ne5+ was fine, but you missed the better Ng5+, winning the bishop and a pawn for the bishop and pawn, but also exposing Black’s king.
