How not to decline the Smith-Morra

This is a blitz game I played a few minutes ago as white with 10 5 time controls, in which my opponent learned why not to play the Sicilian without learning all white's common responses. I played the Smith-Morra Gambit, and he declined in a rather unsound fashion before getting obliterated by forks and other tactics.
Tell me what you think of the game and where I went wrong. I'm sure by move 20 I was starting to miss opportunities for material, but I played it fairly safe and won easily anyways. I had over 10 minutes on my clock upon finishing this game.

Not too bad of a game. However, at move 5, I think d5 would have been safer, followed by Nc3, g3, Bg2, and Nge2.

O.K., but what was wrong with 5. dxe5 ? Black cannot recapture, and I can't see him having close to adequate compensation for the pawn. I can still continue with Nc3, g3, Bg2, and Ne2, but 8. Bb5 looked more interesting, and I always like interesting games.
