his best win is 200 points over your best win. his average opponent rating is also 200 points higher than yours. and if your rating in bullet is based on playing 1 game and beating a 700, I suppose it won't be very accurate.

There's that one game against somebody in the 700 range. Not a judge of how well you play. Instead, let's take the game you did show us, and point out how it's flawed. You also can't call a game of yours an immortal. You would need to be a master level chess player and play a game against your equal or your better flawless from both sides, but with you somehow gaining a slight edge and winning. That's far from an immortal.
