In your sideline, black does not play 7... fxg1=Q?? 8. Qxd8+! Kxd8 9. Rxg1 +/=, but 7... fxg1=N+!, forcing 8. Rxg1? Bg4+ or 8. Ke1 Qh4+ 9. Kd2 (9. g3?? Qe4+) Nc6 -+. This line is called the Lasker Trap.
To be honest, the actual game played out rather strangely. White made a number of major blunders which allowed you to take the win pretty comfortably.
I just finished a 5 minute blitz game which ended in about a minute thanks to my knights. The game was rather amusing. I really it showed the knight's unique jumping ability.
